Terrific Coconut Chocolate Chip Cookies
Makes about 5 Dozen Cookies

1/2 cup Butter Flavor CRISCO
1/2 cup firmly packed brown sugar
1/2 cup granulated sugar
1 egg
1 cup cream of coconut
1 teaspoon vanilla
1 cup all-purpose flour
3/4 cup whole wheat flour
1/4 cup toasted wheat germ
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
1 cup chopped walnuts
Heat oven to 375ºF. Grease baking sheet with Butter Flavor Crisco.
Combine Butter Flavor Crisco, brown sugar, granulated sugar in large bowl. Beat at medium speed of electric mixer until well blended. Beat in egg. Add cream of coconut and vanilla. Beat until blended.
Combine all-purpose flour, whole wheat flour, wheat germ, baking soda and salt. Mix into creamed mixture at low speed until just blended. Stir in chocolate chips and nuts.
Drop level tablespoonfuls of dough 2 inches apart onto baking sheet.
Bake at 375ºF for 9 to 11 minutes, or until set. Cool 2 minutes on baking sheet. Remove to cooling rack.
